When my kids were little, I remember the struggle at the grocery store. They’d beg for those colorful cereals with cartoon characters on the box, and I’d cringe at both the price tag and sugar content. But sometimes, those little splurges are worth it – especially when you can transform them into something special that stretches your dollar further.

That’s exactly what these Fruity Pebbles Cookies do. I discovered this recipe years ago when we had a partial box of cereal sitting in our pantry getting stale. Instead of throwing it away (because wasting food means wasting money!), I decided to get creative.

These cookies quickly became a family favorite. They’re perfect for birthday parties, bake sales, or just a special weekend treat. My kids’ friends would always get excited when they saw these colorful cookies coming out of our kitchen.

The best part? You don’t need fancy ingredients or special equipment. Just a few basics plus that colorful cereal. If you catch Fruity Pebbles on sale (I’ve found them for as low as $2 a box when using coupons and watching for deals), this entire batch costs less than $5 to make – much cheaper than store-bought specialty cookies!

Ingredients

1 cup (2 sticks) unsalted butter, softened 1 cup granulated sugar 1/2 cup brown sugar, packed 2 large eggs 1 teaspoon vanilla extract 2 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup Fruity Pebbles cereal (plus extra for topping) 1/2 cup white chocolate chips (optional)

For the Drizzle:

1 cup powdered sugar 2 tablespoons milk (adjust for consistency) 1/2 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Mix in the eggs and vanilla extract until well combined. In another bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Fold in the Fruity Pebbles cereal and white chocolate chips (if using). Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden. Let them cool on the pan for 5 minutes before transferring to a wire rack. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to create the drizzle. Once the cookies have cooled, drizzle the icing over the top and sprinkle extra Fruity Pebbles for decoration.
