Ingredients
Biscuit (Cookie) Dough 1 cup unsalted butter 1 cup brown sugar 1 tbsp 2 % milk 1 tsp baking Soda 1/2 tsp salt 1 3/4 cup whole wheat flour (Wholemeal) 1 tbsp baking powder 1/2 cup large flake oats (not instant) 3 tbsp Golden Syrup Topping 1 cup milk chocolate (may need more) 1 tbsp coconut oil or butterInstructions
Pre-heat the oven to 350 degrees and line two large baking sheets with parchment paper. Add the unsalted butter and brown sugar to a mixer and beat until combined. Add the baking soda, golden syrup, and milk, and beat until combined. Add the whole wheat flour, large flake oats, baking powder, and salt, then mix until combined. Roll the mixture into uniform balls using a small scoop or spoon, and place them on the cookie sheets 1 inch apart. Gently press them down slightly and bake for 12-15 minutes, or until just golden brown. Remove the cookie trays from the oven and, using a spatula, move the cookies to a wire rack to cool. Once cooled, flip each cookie over onto the wire rack. Break up the milk chocolate into a bowl and add the coconut oil or butter, then microwave in 20-second increments until melted and smooth. Dip the bottom of each cookie in the chocolate and place them back on the wire rack to harden. You can also use a spoon to put chocolate on each cookie, which is less messy.Notes

I’m picky when it comes to chocolate, especially when I bake, because I want the best I can afford.
When dipping the HobNobs, I purchased a large Lindt Milk Chocolate Bar from Amazon for $8.49.
The price of the Lindt Chocolate Bar is excellent and comparable to that of mainstream brick-and-mortar stores.
Once the cookies cooled, I melted the chocolate and dipped the bottom side; then, I returned them to the wire rack to harden.
To melt the chocolate, I broke it into pieces and added 1/2 teaspoon of coconut oil to help thin it out in the microwave, melting in 20-second intervals.
